There was a time when Ireland was known for its pioneering ways; the Coffey still, triple distilled pot still whiskey and interestingly, the lesser known invention of ginger ale.
Created by an American doctor, Thomas Cantrell, in Ireland in the late 1800’s, his pale dry ginger ale became an instant success. The idea was soon pilfered by the Canadians who labelled it dry and then later by the Swiss who sold out to the English but Schhh, the less said about that the better.
This dry style of ginger ale became extremely popular in the US in the 1920’s as it masked the taste of bootlegged whisky which led to a natural partnership that has existed ever since. Probably the most expensive ginger ale ever created. Our ginger extract is a blend of 3 African gingers, blended with a touch of lime and organic apple syrup from the Highbank Orchard in Kilkenny. Lower in sugar than other premium ginger ales it is best reserved connoisseurs who know their ginger.
For a refreshing, alcohol free serve, fill a glass with ice, pour in chilled Poacher’s Ginger Ale, garnish with a lime wheel. Incredibly tasty.

Fill a highball with ice cubes, pour in 50ml Jameson Irish Whiskey and top up with chilled Poacher’s Ginger Ale. Squeeze in a lime wedge and drop into the glass.
Jawbox is a single estate gin produced in Northern Ireland and it is best served with ginger ale as a tribute to Belfast, where ginger ale was invented.
